Italian Ground Turkey Sausage & White Bean Soup

It is freezing cold here today (negative 22 degree windchill) and the kids got a “cold day.” I was home with them, and made this soup for dinner, and we’ll have lots of leftovers. We served it with grilled cheese sandwiches, and it was incredibly yummy!

Ingredients:
1 tablespoon olive oil
1 cup finely diced yellow onion
1 cup finely diced carrots
3/4 cup finely diced celery
2 tsp minced garlic (I always use gourmet garden garlic paste).
1 green bell pepper diced
1 pound lean ground turkey (or could sub lean ground italian sausage turkey)
1-2 teaspoons Italian Seasoning
1 tablespoon dried basil
2 teaspoons dried oregano
1 cup diced red potatoes
6 cups beef broth
2 (14.5-ounce) cans diced tomatoes
2 cans white northern beans
Fresh parmesan cheese for topping

Instructions:

  1. Finely dice onion, carrots, and celery, and add garlic. Cut up potatoes, and bell pepper.

  2. Heat 1 tbsp olive oil in a large pot over medium heat. Add onion, carrots, and celery, sauteeing for 10-15 minutes (or until soft), stirring often. Add garlic and green pepper. Cook for 3-4 more minutes. Push veggies to the sides of the pot.

  3. Add lean ground turkey to the center of pot, season to taste (with salt and pepper), break into small crumbles, and cook all the way through.

  4. Add Italian seasoning, basil, oregano, and potatoes.

  5. Add undrained tomatoes, and beans, stirring for 1 minute. Pour in broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until veggies are tender.

I like to prep my soup, and let it simmer all afternoon, then serve, but it probably only needs 20-25 minutes to simmer and cook if you’re preparing and eating at the same time!

Ladle into bowls, serve with a hot grilled cheese sandwich, and top with fresh parmesan!
